Winemaking: An inspiringly meticulous and passionate winemaker. Dora works and watches the vineyards everyday to make sure the fruits are at their most expressive. Hand harvested / de-stemmed with some berries remaining whole / wild ferment in concrete vats / aged in various sized oak barrels / pressed and aged in bottle for 2 years.
