Winemaking: 75% destemmed (25% wholebunch) left to ferment in open top vat. Fermentation occured over 21 days and then airbag pressed to settle for two weeks. After settling the juice was pressed to old oak where it underwent full malolactic fermentation after which it was matured for 10 months in 4 year old barrel.

Serving Suggestion: Room temp
Definitely worth a decant if you can to let the purity of this cool climate pinot sing. Pleasantly lighter in body but with a dense consistency to give it an intriguing depth which could please your fuller bodied drinkers. More savoury then fruity, a little bit of that mushroom and forest floor action, but only slight. For me it's all about the lengthy journey.
