Winemaking: 'The wine is put into the vat by simple gravity and without crushing.
The Négrette is vinified in the traditional way for about two weeks. The vinification is done in open vats of small capacity, which allows better temperature control (25 to 28°). The aging lasts from 8 months to 10 months.'
