Winemaking: 30% whole bunches with 70% destemmed Pinot Grigio grapes undergo wild yeast fermentation in an open-top fermenter, with between 10 and 17 days on skins. Aged for 12 months in neutral French oak barriques. It is unfiltered and suitable for vegans - Paul

'The nose displays blood orange, cumquat, plum and fresh herbs, whilst the palate presents pink grapefruit and mandarin. The palate is detailed and substantial with hints of cured meats and saltiness, combined with abundant graphite-like phenolics that provide a minerality and weight, yet without overpowering the finesse and elegance that the wine displays overall.' – Paul Scorpo
