Winemaking: Word on the street is that Gustavo lead the charge towards organic/sustainable farming in the Itata Valley. Granite soils found at 350m above sea level, dry farmed, hand harvested and destemmed. Fermented over two weeks with an additional week of skin-contact before being pressed to stainless steel for two months. Matured in neutral french oak from 2 to 3 months before finishing up for a little more resting in stainless.
