Winemaking: Sémillon hand picked and whole bunch press / gentle phenolic press / settled overnight then cleared of leas to ferment in stainless steel / Sauvy B was picked a month later and treated the same as the sémillon / blended together after malolactic ferment / elevage in stainless steel for 7 months

Serving Suggestion: Fridge cold

Fresh lemon citrus & tropical bursts of juice. My favourite element is the wet stone minerality that keeps you wanting another sip sooner rather then later. This is perfect with some baked white fish or oysters. You won't even need a lemon wedge.
